Caucasus Mountains as the Eastern Border of Europe?

In recent days I have listened to a Ward Churchill lecture in which he
rightly points out that Europe geographically is little more than a
couple of peninsulas sticking out of the Asian landmass, not a continent
but a cultural construct. Are the Caucasus Mountains considered the
Eastern borders of Europe and if so why?  Does this have to do with the
fact that Central Asia is mostly Muslim? Can you suggest any references,
particularlyURLs, regarding the history behind this?
